El Jimador celebrates its first anniversary

Occupying what was once O’Leary’s Irish Pub and located right in the city center, the fine dining and lively atmosphere of the restaurant create an elegant dining experience for people who want to eat tasty food with a phenomenal standard of service.

El Jimador opened amid the COVID-19 pandemic, as businesses around the world struggled with indoor seating restrictions. Despite the challenge of operating a sit-down restaurant during COVID-19, El Jimador was able to stay open long enough to see some success in his restaurant business.

“We want to offer good drinks to give it an authentic vibe, a place where you can relax on a Friday night,” said Olivia Pacheco, co-owner of El Jimador.

El Jimador has an amazing range of 50 drinks, 500 food items, and 85 botanas (snacks). They serve classic Mexican fare like tacos, burritos, enchiladas, and even seafood and steak dishes. Although the restaurant focuses on traditional foods, they always keep these dishes fresh with new versions. Authenticity is a very important part of their mission. Fresh herbs and hot spices can be found on the menu as mouth-watering sides.

“We want you to feel like you’re in Mexico,” said Ryan Gifford, co-owner of El Jimador.

The food is served with spices and ingredients that give it a unique Mexican flair and with a sense of flair that you can’t ignore.

“The idea is just to serve good food in a good environment,” Gifford said.

It all comes down to the idea of ​​bringing families together around a table around freshly prepared meals.

“We’re just going to keep doing what we usually do,” Gifford said. “Serve good food and give good service.”
